– Nobu Sets the Standard


Nobu


When speaking about Japanese restaurants in London, you have to mention Nobu. This restaurant was the first European venture for chef Nobu Matsuhisa and it has been serving up modern Japanese cuisine to Londoners since 1997. Matsuhisa’s formal training as a sushi chef was influenced by the time that he spent working in Peru, and this fusion of Japanese and Latin American cuisine is something that makes Nobu unique.




The restaurant is located in The Metropolitan Hotel in Mayfair. It has been awarded a Michelin star and is the fine dining experience one would expect from such a place.

Reservations are recommended and the prices are not for the faint of heart. Nobu can seat up to 150 guests and has amazing views of Hyde Park from its very large windows.

The restaurant also has a separate sushi bar. The décor is simple and spare, reflecting the simplicity of Japanese design.

It has long been a favourite among the rich and trendy, and you will often see celebrities dining at Nobu.

Although Nobu’s fresh take on modern Japanese cuisine has since been copied by many other restaurants, it is rarely done better than here. The service is prompt and professional, and servers are always willing to help you navigate the rather large menu.

Nobu has many signature dishes, such as Hamachi Sashimi with Jalapenos, Squid Pasta with Garlic Sauce, and Black Cod with Miso. Matsuhisa also serves what he calls “new style sashimi” which is lightly seared on the outside.

The Latin influences shine through on the menu in dishes like Anticucho Peruvian Style Tea Smoked Lamb, Crispy Pork Belly with Spicy Miso and Ginger Salsa, and Tomato Rock Shrimp Ceviche.

Nobu has a wide variety of sakes available, including Hokusetsu which they import exclusively for the restaurant from Northern Japan.

Desserts include a Chocolate Bento Box, which is Chocolate Fondant served with Green Tea Ice Cream, Kalamansi Semifreddo, and Below Zero Apple Tart.

Japanese restaurants in London owe a debt to Nobu for paving the way with their innovative modern take on an ancient cuisine.
